Primary Function: Is responsible for producing salads, hors d’ oeuvres, desserts, and other cold food for à la carte and banquet food service for breakfast, lunch, and dinner.
Duties & Responsibilities:
- Establishes a warm welcome and professional atmosphere for guests by giving ultimate service and cooperation.
- Must be able to produce quality food under stress in fast-paced circumstances.
- Maintains standards of quality and presentation at all times.
- Perform meal-prep activities before guests arrive.
- Prepare salad dressings.
- Washing, chopping, and dicing both fruits and vegetables.
- Check food plating, temperature, and portions for all cold dishes.
- Ensure that the ingredients that are in stock and fresh, are of the highest quality, and are kept in the appropriate containers and at the right temperature to maintain their freshness and quality and reduce food waste.
- Monitor stock and notify the Executive Chef of low food inventory levels.
- Recommend modern recipes to renew our menu and add nutritious, creative cold dishes.
- Check Banquet orders for pantry-specific items to be prepared
- Maintain a clean station at all times.
- At the closing of a meal period, breaks down and performs correct disposition of leftovers with the proper storage methods.
- Sterilize kitchen equipment at the end of your shift.
- Assist the dishwasher as business volume requires.
- Remains aware of and practices all sanitary health practices.
- Available to work flexible hours, evenings, holidays, and weekends.
- Abides by all company policies and procedures set forth by the General Manager.
- Performs other job-related duties as assigned by management.

Knowledge/Experience Requirements: High school education or equivalent; basic reading and writing skills.

Working Conditions: Exposed to potentially hazardous power kitchen equipment.
Physical Demands: Long periods of standing and walking; must be able to lift 50 pounds.
